Happy Friday! We all made it to the end of the week! Cookies sound like a great way to end a long week. Don’t you agree?
How to make individual chocolate cookies with either no sugar, no egg, no grains, and/or with protein powder.
Or whatever else floats your boat 😉
We have tried several times to create more recipes of our individual cookies. Had many failures, but we kept trying. Knowing that people like different things… some like starch, some hate it, some like psyllium husk, others hate it, eat eggs, some do not, like grains, or hate them, etc. So we knew we had to create a few different variations to hopefully meat most peoples needs. And ours as some days we like different things.
All of these chocolate chip cookies can make one large cookie or two smaller cookies. You can eat all yourself or share.
Note: these cookies do not have the texture of original cookies. Which makes sense right? Hard to do that with no sugar to help give it a crunchy crystallized texture. And using protein powders make it taste different as well as provide a different texture. Which if you have baked with protein powders before you already know this.
We enjoyed all our different variations! It’s fun for us to play around with ingredients to create similar yet different recipes.

Recipeone
Stevia egg chocolate chip cookie (grain-free too)
makes one or two cookies
bakes at 350 degrees for 8-10 minutes
ingredients:
- 1/4 cup almond meal (we used Bob Red mills brand)
- 1/4 teaspoon baking soda
- about 15 -20 drops liquid stevia
- 1/2 teaspoon vanilla extract
- 1 tablespoon ghee (butter or vegan butter, or solid coconut oil)
- 1 egg yolk
- 1-2 tablespoons chocolate chips
directions:
Mix all ingredients together in a bowl.
Place raw cookie dough onto a cookie tray.Note it makes 2 cookies or one large cookie.
Baked 350 for 8-10 minutes.
And that is it! Enjoy warm out of the oven!

- 1 tablespoon sweet potato flour (could use almond meal or another flour of choice)
- 2 tablespoons brown rice protein powder
- 1/2 tablespoon psyllium husk
- 1/4 teaspoon baking soda
- about 15 -20 drops liquid stevia
- 1/2 teaspoon vanilla extract
- 2 tablespoon solid coconut oil (butter or vegan butter, or ghee)
- 2 tablespoons yogurt (or could try a puree of some sort like apple or sweet potato)
- 1-2 tablespoons chocolate chips
directions:
Mix all ingredients together in a bowl.
Place raw cookie dough onto a cookie tray.Note it makes 2 cookies or one large cookie.
Baked 350 for 8-10 minutes.
And that is it! Enjoy warm out of the oven – might be a little delicate.
Now for the 2nd version with using coconut oil and husk we wanted to see if it would work without the husk and using ghee as our fat. And it did!

Now for the last version we played around with using a starch. As we like how starches work in egg-free, gluten-free baking (most of the time). We know some people do not like starches so that is why we created other recipes (ones above) that do not contain it. We also used coconut sugar in this version to see if that helped keep a crunchy cookie texture, it did a little. Yummy in it’s own category. You could also try using other protein powders just note that they may require more or less liquid.
*note: for all the batters you want it to be thick, but smooth batter, not runny.

Egg-free protein chocolate chip cookie
makes one or two cookies
bakes at 350 degrees for 9-12 minutes
Ingredients:
- 2 tablespoons arrowroot starch (could use another starch like corn or potato)
- 2 tablespoons brown rice protein powder
- 1 tablespoon almond meal
- 1/4 teaspoon baking soda
- 3 tablespoons coconut sugar
- 1/2 teaspoon vanilla extract
- 2 tablespoon ghee (or butter) (softened)
- 1 tablespoons yogurt (or could try a puree of some sort like apple or sweet potato)
- 1-2 tablespoons chocolate chips
Directions:
Mix all ingredients together in a bowl.
Place raw cookie dough onto a cookie tray.Note it makes 2 cookies or one large cookie.
Baked 350 for 8-10 minutes.
Enjoy warm out of the oven – might be a little delicate till it cools.
Phew.
Now that is a lot of cookies.
