Planning Ahead

You can make this ice cream on the same day, but preparing this, or any fruit ice cream, a day ahead is a great idea. Preparing it the day before can enhance the flavor of the ice cream.

If you are making the custard style, the texture of the ice cream can also be improved by preparing a day ahead.

Improved Flavor

For most fruit ice cream, it is best to mix the fruit with sugar and allow it to sit.

As the fruit and sugar chill together in the fridge, they form a fruit syrup.

The fruit and sugar should sit for at least 2 hours, but if you allow it to sit for 12 – 24 hours, the fruity flavor will be enhanced.

It’s a good idea to prepare your fruit the day before.

Improved Texture

Making custard ice cream requires heating up the ice cream base. The ice cream base has to be cooled before processed in the ice cream maker.

You can cool the ice cream base in the fridge for about 3 hours and it should be sufficiently cooled. Cooling the ice cream overnight will ensure that it has indeed been thoroughly and evenly cooled.

Making the ice cream base of custard style ice cream the day before is a good idea.

Peaches

  • 4 peaches ripe
  • 1/2 cup lemon juice
  • 1/2 cup sugar

Ice Cream Base

  • 1 cup milk
  • 3/4 cup sugar
  • 2 cups heavy cream

Instructions

Peaches

  • Wash peaches well.

  • You can leave the skin on or take it off – whichever you prefer.

  • Finely chop or mash peaches.

  • Combine peaches, lemon juice, and 1/2 cup sugar in a small, airtight container.

  • Chill peach mixture in the fridge for at least 2 hours.Leaving the strawberries, in the fridge longer will enhance the flavor.

Ice Cream Base

  • Mix milk and sugar together, dissolving the sugar.

  • Strain peaches and add juice to milk mixture, setting peaches aside.

  • Stir in heavy cream.

  • Pour into ice cream maker.

  • Mix about 20-25 minutes or according to manufacturer’s instructions.

  • Add peaches to the churning ice cream.

  • Mix 5 more minutes in your ice cream maker.

  • Gently, heat milk in saucepan until bubbles start to form on top - but do not boil.

  • Meanwhile, beat eggs about 1-2 min until they are light and fluffy.

  • Slowly add sugar to the eggs and beat for 1 more minute.

  • Pour about half of the heated milk over the egg mixture and combine.

  • Pour the remaining milk over the eggs and mix well.

  • Return to saucepan and continue to heat over medium heat until milk thickens. You'll know your done when it starts to stick to the back of your spoon.

  • Remove from heat and chill at least 3 hours to overnight. The more thoroughly chilled, the better your ice cream texture will be.

  • Stir heavy cream into the cooled milk mixture.

  • Strain peaches and add the peach juice to milk mixture, setting peaches aside.

  • Pour the ice cream base into your ice cream maker.

  • Mix about 20-25 minutes or according to manufacturer’s instructions.

  • Add peaches to the ice cream as it mixes.

  • Mix 5 more minutes in your ice cream maker.

    Made this ice cream yesterday, it was easy and texture was awesome, great flavor. But next time cutting lemon juice down to 1/4 cup . It almost overpower the peach taste. But good recipe.will use again. Thank you
